To begin with, since the XXcel and the V2 (I assume the V2 Sanded) do not come polished, what polish did you use to get them this way?
That is probably the polish you should use to maintain them.
The Savage Flip is polished with Ebonite's Powerhouse Factory Finish polish. I believe that polish has no grit in it; so, you should continue with it or another no-grit polish like Black Magic or Brunswick's High Gloss polish.
The GP2 comes "ultra Smooth" which is either a 1500 grit matte finish (sandpaper) or a result of Track's Clean and Smooth, which does about a 1500 grit semi-dull finish. I say, "semi-dull" because if you press long enough and hard enough you will get a slight polsihed effect from it.
Balls do not and should not be polished after or before every set. They should be cleaned regularly; whether it's every set or every 3rd set is up to you and how dirty they get. They should be cleaned immediately after use. As for polish or re-finishing, again, it depends on the wear the ball gets. SOme wear faster and some wear slower depending on many factors. Ball reaction and appearance should govern that.
