According to the VB page, Resurrection leaves a roughly 800-grit surface. That's subject to any number of factors and it's possible to end up with something close to 1500-grit if you use it for a longer period of time. Adding a light polish (assuming a grit-less one) on top of that will, I think, be duller than a typical 1500-grit polished surface like, for instance, many Storm balls.
I think that will be a little longer than a real 2000-grit surface. The 2K-grit will not be quite as susceptible to carrydown as it won't actually be polished. Should be slightly smoother at the breakpoint, too.
Which is stronger? I don't think they'll be different enough to make it worthwhile to have two otherwise-identical balls in an arsenal. I think they'll handle comparable amounts of oil, though the 2000-grit should be very slightly stronger.
