When bathing a ball they tell you to take it down in grit to open the pores. My question is if you throw a duller non polished ball will it need more maintenance than if throwing a polished higher grit ball, since the polish clogs the pores?

Yes. Dull equipment in general picks up and holds more oil, the polish prevents it from soaking into the ball as quickly. Further, dull equipment is typically used on higher volumes of oil, exacerbating the problem and requiring yet more maintenance.
