Depending on what you are having them to do. Like for example I have a shop apprentice that I am training to do everything and I pay him $8.00/hour, straight pay as contract labor. This way I do not have to have insurance on him nor pay social security or taxes. Now there is catch, he cannot work over 20 hours a week per my accountant. But if you are just looking for what I would call a shop helper that just rings up sales and maybe cleans balls then I would not pay them more than minimum wage and depending on your financial situation you may still want to put them on as contract labor.
