I'm referring back to this topic. I have the exact same setup as this:

My question is, how do I know how much to crank the table in order to dial in the pitches? Like how much does one full turn on the Y axis change the pitch from 0,0?

Take your plug cutter and zero out the table. There also should be a ready out on the table itself. Other than that you'll just have to get some junk balls and experiment.
