I'm considering taking my BW to 600( scotchbrite / sandpaper) grit for a little more hook. Should I use polish or not afterwards? Or should I take it down using 500 Abralon?

More and more, I've found most balls respond better to Abralon. However, be cautioned here. When the original Widow first came out, many people reported lackluster results after taking the surface down. If you don't like the way it's reacting now, I suppose you have nothing to lose. If you like the way it's reacting now and just want more bite out of it, I'd consider another ball in your arsenal or, if you can afford it, another ball in general. Just my .02.
