The Legends balls take changes fairly well. I really, really like my Big Kahuna, in both 15 lb and 16 lb versions. One caution however, the BK's particles are diamonds; that means that even the silicon carbide abrasive in wet/dry sandpaper will not truly affect the diamonds, but only the resin base in which they are embedded. This means that changes you make with sandpaper will be reflected in the ball's reaction but not quite as much as if you used a very hard abrasive, like Trizact sandpaper or the diamond pads in a Haus machine. (I hope I am not confusing you: you will definitely see ball reaction changes when you sand and when you polish this ball!)
One other concern is with your guardian overlay. It is a VERY soft lane surface; unless the lane people at your center use plenty of oil in the heads, you must be very watchful of the BK starting to hook early. It will, of course, be great once you start getting carrydown, as all Guradian overlays get.
FYI the stock sheen finish is slightly smoother than the 800 grit nylon pad that Legends uses to get the final finish on the ball. It might be, in fact, closer to around 1200 or even 1500 grit. But use the grit that gets you the best reaction: anywhere from 800 - 2000 grit, or even a light polish.
