I have a Bandit that i am looking to get a little more lenght out of but still be strong on the backend. How much difference would there be between say 2000 FF vs. The 1500 polish.

It depends on which type of polish you use. An abasive polish would be needed to make it finer than Storm's finish. Probably 3000 or 4000 grit + a polish would be better. But remember it will get more length but be flippier and handle less oil and be even more susceptible to carrydown.
