What's the difference between a light oil ball that is 2 pieces and a light oil ball that is 3 pieces?

Nowadays, it's all about the core/cover combination ... strong core/strong cover, strong core/weak cover, weak core/strong cover, and weak core/weak cover. Matching up to the conditions as well as knowing the strengths and limitations of each is key to proper selection and success.

Columbia 300 Beast Urethane or the Storm Blue Flame Urethane.  Any reactive ball I have bought that was supposed to be for dry lanes, is too strong.

Power Groove Dry/R is a real tame and smooth ball for very light lanes. I also made some good experience with the black Pure Hammer, which is, due to its low RG core, much stronger and earlier. Very good for longer light oil.
Another astonishing ball for me on medium-dry conditions and clean backends is MoRich's Sahara. Hell of a ball, a true high performance solution for light oil.

Well on heavy oil, I usually stand at like 15 and throw over 10. When they get really dry, I have to stand at like 30 and bowl over 10. I would rather not have to do that.

I was thinking of trying something different than Brunswick, so I was thinking maybe the Mercury or Straight Flush. One is 3 pieces, other is 2 pieces. What would be the difference in reaction?

Could the Absolute Power by Lane Masters work if you have it polished and you have it drilled with a weak layout?
