Do you realize that these balls are different enough, mostly by reason of their cores, that they are not comparable balls? They are for different oil patterns AND amounts. The RS-1 not only hooks earlier and more but handles more oil than the SB. The SB is for lighter oil, hooks less and later.
In general, and if drilled the same, the Ultra should be slightly ealrier with slightly more overall hook than the Ultra. A friend uses the RS-1 and the Ultra and seems to find them a very good 1-2 combo. He used them all summer in a 14 week league and he's averaged about 220, with incredible carry power from the RS-1. His normal average is closer to 210.
